Lasagna

Recipe for Lasagna

1 pound ground italian sausage or ground beef
1 large can tomato sauce
1 large can whole stewed tomatoes (drained)
3 cloves garlic
3-4 cups shredded mozzarella
1 tub ricotta cheese
1 tub cottage cheese
1 package lasagna noodles (no boiling required preferred) 
olive oil
basil
sugar

Preheat oven to 375 degrees

Meat sauce:

Chop garlic. Heat about 1/4 cup olive oil in a pan and then add the garlic once heated until garlic starts to brown.
Add the ground sausage or beef and cook until all red is gone. Drain.
Chop up the drained whole stewed tomatoes and put the tomatoes and tomato sauce into the pan and stir into the meat. Add in about 3 teaspoons basil and about 3-4 pinches of sugar to taste. Bring to a boil and then reduce to medium and cook uncovered until thick. Taste and season as necessary.

Cheese sauce:

Mix eggs, cottage cheese, and ricotta cheese in a bowl. Once mixed, then stir in about 2 teaspoons of basil.

Assembling the lasagna:

In a 9x13 pan (metal preferred) spray it with cooking spray and then place about 1/4 cup of the red sauce on the bottom of the pan.
Add 4 noodles and then top with Cheese sauce, Meat sauce, and mozzarella. Repeat this until you are at the top layer. For the top layer place the remaining red sauce and mozzarella on the noodles.

Spray the bottom of a piece of tinfoil lightly with cooking spray and Cover the lasagna with the tinfoil. Place in the oven for 55 minutes. When the timer goes off, remove the tinfoil and cook for another 5-6 minutes until the top is golden on the edges then pull from the oven. Allow at least 15-20 minutes for the lasagna to set and cool before attempting to cut it.

Serves 9-15 depending on the size you cut the slices.

Homemade Thanksgiving Stuffing


Today's post is recipe of my dad's for Thanksgiving Stuffing.

Ingredients for small bird (double as needed)

1 Loaf of bread
1 Can cream of mushroom soup
1 Cup Celery
1 Cup white or yellow onion
1 Cube salted butter
 Poultry seasoning
